Description

These Zesty Quinoa Veggie Bowls are a perfect meal prep option, packed with nutrients and flavor to kickstart your day.


Ingredients

Scale

1 cup quinoa

2 cups vegetable broth

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 bell pepper, diced

1 avocado, sliced

1/4 cup fresh parsley, chopped

Juice of 1 lemon

2 tablespoons olive oil

Salt and pepper to taste


Instructions

1. Rinse quinoa under cold water.

2. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.

3. Fluff quinoa with a fork and let it cool.

4. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, and parsley.

5. Add cooled quinoa to the vegetable mixture.

6. Drizzle with lemon juice and olive oil, then season with salt and pepper. Toss to combine.
