Description

Ingredients

2 cups cooked chicken, shredded

1 bell pepper, sliced

1 onion, sliced

2 tablespoons olive oil

1 tablespoon fajita seasoning

4 cups cooked brown rice

1 cup black beans, drained and rinsed

1 cup corn, frozen or canned

1 avocado, sliced

Fresh cilantro, for garnish


Instructions

1. 1. In a large skillet, heat olive oil over medium heat.

2. 2. Add sliced bell pepper and onion, sauté until softened.

3. 3. Stir in shredded chicken and fajita seasoning, cook until heated through.

4. 4. In meal prep jars, layer cooked brown rice, black beans, corn, and the chicken mixture.
