A quick and healthy stir-fry made with zucchini and black beans, perfect for a nutritious meal.
Ingredients
1 medium zucchini, diced
1 can (15 oz) black beans, rinsed and drained
1 tablespoon olive oil
1 clove garlic, minced
1/2 teaspoon cumin
1/2 teaspoon chili powder
Salt and pepper to taste
Fresh cilantro for garnish
Instructions
1. Heat olive oil in a mug or microwave-safe bowl.
2. Add minced garlic and sauté for 1 minute.
3. Stir in diced zucchini and cook for 2-3 minutes until tender.
4. Add black beans, cumin, chili powder, salt, and pepper.
5. Mix well and microwave for another 2 minutes.
6. Garnish with fresh cilantro before serving.
