Ingredients
1 cup quinoa
2 cups vegetable broth
1 lemon, juiced and zested
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 cup red onion, finely chopped
1/4 cup parsley, chopped
Salt and pepper to taste
1 tablespoon olive oil
Instructions
1. Rinse the quinoa under cold water.
2. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
3. Remove from heat and let it sit covered for 5 minutes.
4. Fluff the quinoa with a fork and let it cool.
5. In a large bowl, combine the cooled quinoa, lemon juice, lemon zest, cherry tomatoes, cucumber, red onion, and parsley.
6. Drizzle with olive oil and season with salt and pepper. Toss to combine.
