Description

This Zesty Lemon Herb Quinoa Meal Prep is a refreshing and nutritious dish that’s perfect for meal prep. Packed with protein and flavor, it’s a great option for lunch or dinner.


Ingredients

1 cup quinoa

2 cups vegetable broth

1 lemon, juiced and zested

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1/4 cup olive oil

1 teaspoon garlic powder

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cucumber, diced

1 avocado, sliced


Instructions

1. Rinse the quinoa under cold water.

2. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.

3. Remove from heat and let it sit covered for 5 minutes.

4. Fluff quinoa with a fork and let it cool.

5. In a large bowl, combine cooled quinoa, lemon juice, lemon zest, parsley, cilantro, olive oil, garlic powder, salt, and pepper.

6. Add cherry tomatoes, cucumber, and avocado. Toss gently to combine.
