Ingredients
2 large eggs
1 tablespoon milk or water
1 tablespoon diced bell peppers
1 tablespoon diced onions
1 tablespoon shredded cheese (optional)
Salt and pepper to taste
Cooking spray or oil
Instructions
1. Spray or lightly oil a microwave-safe mug
2. Crack 2 eggs into the mug and add milk
3. Whisk eggs and milk together with a fork until smooth
4. Add diced bell peppers and onions to the egg mixture
5. Season with salt and pepper to taste
6. Microwave on high for 1-2 minutes, checking at 30-second intervals
7. Add shredded cheese on top if desired
8. Let cool for 1-2 minutes before eating
9. Garnish with fresh herbs if available
