Quick and easy vegetable fried rice made in a microwave-safe mug in just 5 minutes. Perfect for busy weeknights when you want authentic Asian flavors without the cleanup.
Ingredients
3/4 cup cooked white rice (preferably day-old)
1/4 cup frozen mixed vegetables (peas, carrots, corn)
1 large egg, beaten
1 tablespoon soy sauce
1/2 teaspoon sesame oil
1/4 teaspoon garlic powder
1 green onion, chopped
1/4 teaspoon rice vinegar
Salt and pepper to taste
Instructions
1. Add cooked rice and frozen vegetables to a large microwave-safe mug
2. Drizzle with soy sauce, sesame oil, and garlic powder. Stir to combine
3. Microwave on high for 90 seconds
4. Remove and stir thoroughly to distribute heat evenly
5. Create a small well in the center and pour in beaten egg
6. Microwave for another 30-45 seconds until egg is set
7. Stir to incorporate scrambled egg throughout rice
8. Add rice vinegar, green onions, salt, and pepper
9. Let cool for 1 minute before serving
Notes
For best results, use day-old rice as it’s drier and absorbs flavors better. Adjust microwave timing based on your appliance’s power level. Add protein like cooked chicken or shrimp during step 2 for a heartier meal.
