Ingredients
4 tablespoons all-purpose flour
3 tablespoons granulated sugar
1/4 teaspoon baking powder
1/8 teaspoon salt
Pinch of nutmeg
3 tablespoons milk
2 tablespoons melted butter
1/4 teaspoon vanilla extract
For glaze:
1/4 cup powdered sugar
1–2 tablespoons milk
1/4 teaspoon vanilla extract
Instructions
1. In a microwave-safe mug (at least 12 oz), whisk together flour, sugar, baking powder, salt, and nutmeg until well combined.
2. Add milk, melted butter, and vanilla extract to the dry ingredients.
3. Stir until just combined – don’t overmix. Batter should be slightly lumpy.
4. Microwave for 60-90 seconds, checking at 60 seconds. Cake is done when a toothpick inserted in center comes out with few moist crumbs.
5. Let cool for 30 seconds.
6. For glaze: whisk powdered sugar, milk, and vanilla until smooth. Drizzle over warm cake.
7. Enjoy immediately while warm!
