Quick and comforting tomato basil soup made right in your microwave mug. Perfect for busy days when you need a warm, satisfying meal in just 10 minutes with simple pantry ingredients.
Ingredients
2–3 cloves garlic, minced
1/4 cup fresh basil leaves, chopped
1/2 cup canned crushed tomatoes
2–3 tablespoons heavy cream or milk
1 tablespoon olive oil
Salt and pepper to taste
Optional: grated Parmesan cheese for serving
Instructions
1. Mince 2-3 cloves of garlic and chop 1/4 cup of fresh basil leaves
2. In a microwave-safe mug, combine minced garlic, chopped basil, crushed tomatoes, and heavy cream or milk
3. Add olive oil and stir all ingredients well to combine
4. Microwave on high for 1-2 minutes until heated through
5. Carefully remove mug from microwave (it will be hot!)
6. Stir soup well and adjust consistency with more cream or milk if desired
7. Season with salt and pepper to taste
8. Top with grated Parmesan cheese and extra basil leaves if desired
9. Serve immediately while hot
Notes
Use a microwave-safe ceramic mug to avoid any safety issues
For a thicker soup, use less liquid; for thinner consistency, add more broth or milk
Fresh basil provides the best flavor, but dried basil can substitute (use 1 teaspoon)
Recipe can be doubled for a larger serving – just use a bigger microwave-safe bowl
Store leftovers in refrigerator for up to 3 days
Can be frozen for up to 2 months – thaw overnight before reheating
