This easy stuffed pepper rice mug recipe combines all the comforting flavors of traditional stuffed peppers in a quick 5-minute microwave meal. Perfect for busy weeknights when you need a satisfying dinner without the fuss.
Ingredients
1/2 cup cooked rice
1/2 cup diced bell pepper (any color)
1/4 cup ground beef or turkey (optional, pre-cooked)
1/4 cup tomato sauce
1 tablespoon shredded cheese
1/8 teaspoon garlic powder
1/8 teaspoon paprika
Salt and pepper to taste
Instructions
1. Add cooked rice to a large microwave-safe mug (at least 12 oz capacity)
2. Layer diced bell peppers and pre-cooked ground beef (if using) over the rice
3. Pour tomato sauce evenly over the ingredients
4. Sprinkle with garlic powder, paprika, salt, and pepper
5. Microwave on high for 2-3 minutes, watching to prevent overflow
6. Remove carefully (mug will be hot) and top with shredded cheese
7. Let cool for 1-2 minutes before enjoying
