Description

A quick and delicious Strawberry Shortcake Mix-In Mug Cake that delivers bakery-quality flavor in just 5 minutes using simple cake mix and fresh strawberries. Perfect for satisfying dessert cravings with minimal cleanup and maximum taste.

Ingredients

Scale

3 tablespoons strawberry cake mix

2 tablespoons milk

1 tablespoon vegetable oil

1 tablespoon cream cheese, softened

2 tablespoons fresh strawberries, diced small

1 tablespoon graham cracker crumbs

1 teaspoon vanilla extract

2 tablespoons whipped cream for topping

Extra fresh strawberries for garnish

Instructions

1. In a microwave-safe mug, combine strawberry cake mix, milk, vegetable oil, and vanilla extract. Stir until smooth and no lumps remain.

2. Gently fold in the softened cream cheese until evenly distributed throughout the batter.

3. Add diced fresh strawberries and mix lightly to avoid breaking the pieces.

4. Sprinkle graham cracker crumbs evenly on top of the batter.

5. Microwave for 60-90 seconds, checking for doneness at 60 seconds. Cake should spring back when lightly touched.

6. Let cool for 1 minute to avoid burns, then top with whipped cream and additional fresh strawberries before serving.

Notes

Cooking time varies by microwave wattage. Start with 60 seconds for 1000+ watt microwaves.

For lower wattage microwaves, increase time in 15-second intervals until done.

Don’t overfill the mug – use no more than half the mug capacity to prevent overflow.

Fresh strawberries work better than frozen for optimal texture.

For extra richness, try mascarpone cheese instead of cream cheese.

Can be made ahead and reheated for 15-20 seconds before serving.
