Ingredients
0.25 cup All-Purpose Flour
1 Tablespoon Coconut Oil
1.5 Tablespoons Cane Sugar
0.5 Teaspoon Baking Powder
3 Tablespoons Non-Dairy Milk
0.25 Teaspoon Vanilla Extract
1 Pinch of Salt (about ⅛ teaspoon)
2–3 Medium Fresh Strawberries, Diced
Instructions
1. Add the Wet Ingredients: First add coconut oil, non-dairy milk, vanilla extract, and sugar to a microwave-safe mug. Whisk together.
2. Add the Dry Ingredients: Add flour and baking powder to the mug. Gently mix everything into a batter, scraping down the sides.
3. Add the Strawberries: Dice strawberries and fold some into the batter. Save a few to sprinkle on top.
4. Microwave: Heat on high for 1 minute 15 seconds. If the batter is still wet, cook in 10-second intervals.
5. Serve and Enjoy: Top with vegan whipped cream or chocolate chips.
