Description
This quick and easy strawberry cheesecake in a mug is the perfect dessert when you’re craving something sweet but don’t want to spend hours in the kitchen. Ready in just 2 minutes using your microwave, this single-serving treat combines creamy cheesecake filling with fresh strawberries and a graham cracker crust.
Ingredients
1 tablespoon cream cheese (softened)
1 tablespoon granulated sugar
1/4 teaspoon vanilla extract
1/4 cup fresh strawberries (sliced)
1 tablespoon graham cracker crumbs
1 teaspoon melted butter (optional, for crust)
Whipped cream for topping (optional)
Instructions
1. In a microwave-safe mug, mix graham cracker crumbs with melted butter (if using) to create the crust base
2. In a small bowl, combine softened cream cheese, sugar, and vanilla extract. Mix until smooth and creamy
3. Spoon the cheesecake mixture over the graham cracker crust in your mug
4. Microwave for 1-2 minutes, watching carefully to avoid overcooking. The cheesecake should be set but still slightly jiggly in the center
5. Remove from microwave and let cool for 2-3 minutes
6. Top with fresh sliced strawberries and whipped cream if desired
7. Serve immediately and enjoy your perfect single-serving dessert!
Notes
Make sure cream cheese is softened to room temperature for easier mixing
Cooking time may vary depending on your microwave wattage – start with 1 minute and add more time if needed
This recipe can easily be doubled or tripled for multiple servings – just use separate mugs
Store any leftover cheesecake in the refrigerator for up to 24 hours
For a healthier version, substitute Greek yogurt for half the cream cheese
