Ingredients
1 cup quick-cooking grits
2 cups water
1 pound shrimp, peeled and deveined
2 tablespoons olive oil
1 teaspoon Cajun seasoning
1/2 teaspoon garlic powder
Salt and pepper to taste
1/4 cup shredded cheddar cheese
2 green onions, sliced
Instructions
1. In a microwave-safe mug, combine water and grits. Microwave on high for 5 minutes, stirring halfway through.
2. In a skillet, heat olive oil over medium heat. Add shrimp, Cajun seasoning, garlic powder, salt, and pepper. Cook until shrimp are pink, about 3-4 minutes.
3. Once grits are cooked, stir in cheese until melted.
4. Top grits with the spicy shrimp mixture.
5. Garnish with sliced green onions.

Notes
