Ingredients
6–8 medium shrimp, peeled and deveined
2 cloves garlic, minced
2 tablespoons unsalted butter
1 tablespoon fresh lemon juice
1 tablespoon white wine (optional)
1 teaspoon fresh parsley, chopped (or 1/2 teaspoon dried parsley flakes)
Salt and pepper to taste
Red pepper flakes (optional)
Instructions
1. Pat shrimp dry and season with salt and pepper
2. In a microwave-safe mug (12 oz or larger), combine minced garlic and butter
3. Microwave garlic butter for 30 seconds until melted and fragrant
4. Add shrimp to the mug, stirring to coat with garlic butter
5. Add lemon juice and white wine (if using)
6. Cover mug with microwave-safe plate or microwave cover
7. Microwave on medium-high power (70%) for 45-60 seconds
8. Check shrimp – they should be pink and cooked through
9. Stir in fresh parsley and red pepper flakes if desired
10. Let cool for 1 minute before serving
