Ingredients
1 cup green lentils
2 cups vegetable broth
1 tablespoon olive oil
1 onion, diced
2 carrots, diced
1 bell pepper, diced
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon paprika
Salt and pepper to taste
4 cups spinach
1/4 cup fresh parsley, chopped
Instructions
1. 1. Rinse the lentils under cold water and drain.
2. 2. In a pot, heat olive oil over medium heat and sauté the onion, carrots, and bell pepper until softened.
3. 3. Add garlic, cumin, and paprika, and cook for another minute.
4. 4. Stir in the lentils and vegetable broth, bring to a boil.
5. 5. Reduce heat, cover, and simmer for 25-30 minutes until lentils are tender.
6. 6. Stir in the spinach and parsley, cooking until spinach wilts.
7. 7. Season with salt and pepper to taste.

Notes
These jars can be stored in the refrigerator for up to 5 days.
