Ingredients
2 cups cooked brown rice
4 boneless, skinless chicken breasts
2 cups broccoli florets
2 cups diced bell peppers
1 cup diced carrots
1/4 cup soy sauce
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Instructions
1. Preheat the oven to 400°F (200°C).
2. Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
3. Place the chicken on a baking sheet and bake for 25-30 minutes until cooked through.
4. While the chicken is baking, steam the broccoli and carrots until tender.
5. In a large bowl, combine the cooked rice, steamed vegetables, and diced bell peppers.
6. Once the chicken is done, let it rest for a few minutes before slicing it into strips.
7. Divide the rice and vegetable mixture into meal prep jars and top with sliced chicken.
8. Drizzle with soy sauce and olive oil before sealing the jars.
