6 biscuits (homemade or store-bought)

1 pound breakfast sausage (good quality recommended)

1/2 cup flour (Wondra Flour works best for smooth gravy)

3 to 4 cups whole milk (for extra creaminess)

Salt to taste

Black pepper to taste


Instructions

1. Cook breakfast sausage in a large skillet over medium to medium-high heat, breaking it up with a spatula as it cooks until browned and fully cooked. Remove sausage and set aside, keeping drippings in pan.

2. Add flour to the sausage drippings in the same pan, whisking constantly to create a roux. Cook for about 1 minute to eliminate raw flour taste.

3. Gradually add milk while whisking constantly to prevent lumps. Continue whisking and bring mixture to a simmer.

4. Let the gravy simmer until it thickens to desired consistency, whisking occasionally. Season with salt and pepper to taste.

5. Return cooked sausage to the gravy and stir to combine. Keep warm until ready to serve.

6. Place biscuits in large mugs and pour hot sausage gravy over them. Serve immediately while hot.


Notes

Use whole milk for the richest, creamiest gravy texture.
