Description
Quick and easy ramen noodles cooked perfectly in a microwave-safe mug with customizable toppings and seasonings for a satisfying single-serving meal.
Ingredients
1 package instant ramen noodles
1½ cups boiling water
½ packet ramen seasoning (adjust to taste)
1 egg, beaten (optional)
¼ cup mixed vegetables (frozen or fresh)
1 green onion, chopped
½ teaspoon sesame oil
Red pepper flakes to taste
Instructions
1. Break ramen noodles in half and place in a large microwave-safe mug
2. Add boiling water to cover noodles by ½ inch
3. Add half the seasoning packet and vegetables
4. Microwave for 2 minutes on high power
5. Stir noodles and add beaten egg if using
6. Microwave additional 30-60 seconds until noodles are tender
7. Stir in remaining seasonings, sesame oil, and green onions
8. Let cool for 1 minute before serving
Notes
Use a large microwave-safe mug to prevent overflow
Adjust cooking time based on your microwave wattage
For spicier version, add sriracha or chili oil
Protein can be added – try leftover chicken or tofu
