Description

Quick and comforting chicken noodle soup made in a microwave-safe mug. Perfect for busy days when you need something warm and nourishing in just 3 minutes.


Ingredients

Scale

1 cup chicken broth (low-sodium preferred)

1/2 cup shredded cooked chicken (rotisserie works great)

1/4 cup egg noodles

1 tablespoon dried parsley

1/2 teaspoon dried thyme

Salt and pepper to taste


Instructions

1. Fill microwave-safe mug 2/3 full with hot water and add a pinch of salt

2. Add egg noodles to the mug, leaving room for expansion

3. Microwave on high for 3 minutes until noodles are tender

4. Carefully remove from microwave (mug will be hot!)

5. Add shredded chicken, parsley, and thyme

6. Stir well and season with salt and pepper to taste

7. Let cool for 1 minute before enjoying


Notes

Use a large mug (at least 12 oz) to prevent overflow

Pre-cooked rotisserie chicken saves time

Store leftovers in fridge for up to 3 days

Can substitute with rice noodles or zucchini noodles for variations
