Ingredients

2 scoops chocolate protein powder (about 60g)

2 tbsp unsweetened cocoa powder

2 tbsp almond flour or oat flour

1/4 tsp baking powder

Pinch of salt

23 tbsp sugar-free sweetener (adjust to taste)

34 tbsp unsweetened almond milk

1 large egg or flax egg for vegan

1 tbsp melted coconut oil

1/4 tsp vanilla extract

1 tbsp dark chocolate chips (optional)


Instructions

1. Lightly grease a 12-oz microwave-safe mug with cooking spray

2. In a small bowl, whisk together protein powder, cocoa powder, almond flour, baking powder, salt, and sweetener

3. In the mug, whisk together almond milk, egg, melted coconut oil, and vanilla extract

4. Add dry ingredients to the mug and stir until just combined (don’t overmix)

5. Fold in chocolate chips if using

6. Microwave for 60-75 seconds, checking at 60 seconds. The top should be set but still slightly jiggly
