Description

This Lentil Sweet Potato Mug Dinner is a quick, microwaveable plant-based meal that’s high in fiber, gluten-free, and packed with cozy flavors.


Ingredients

Scale

1/2 cup cooked lentils

1/3 cup cooked sweet potato (mashed or diced)

1 tbsp tahini

1/4 tsp smoked paprika

1/4 tsp garlic powder

Pinch of salt

1 tbsp water

1 handful baby spinach or chopped kale


Instructions

1. Add cooked lentils and sweet potato to a large microwave-safe mug.

2. Mix in tahini, paprika, garlic powder, salt, and water.

3. Stir to combine until smooth and saucy.

4. Fold in spinach or kale.

5. Microwave for 1.5–2 minutes on high.

6. Let cool for 1 minute, stir, and enjoy!


Notes

You can substitute tahini with almond butter or hummus.

For extra spice, add red pepper flakes or hot sauce.

Use frozen greens if you’re out of fresh.
