Ingredients
1 pineapple ring, drained
2 tablespoons brown sugar
1 tablespoon butter, small pieces
3 tablespoons all-purpose flour
2 tablespoons granulated sugar
1/4 teaspoon baking powder
Pinch of salt
2 tablespoons milk
1 tablespoon vegetable oil
1/4 teaspoon vanilla extract
Instructions
1. Place brown sugar and butter pieces in bottom of microwave-safe mug
2. Place drained pineapple ring on top of brown sugar mixture
3. In small bowl, whisk together flour, granulated sugar, baking powder, and salt
4. Add milk, oil, and vanilla to dry ingredients, mixing until smooth
5. Carefully pour batter over pineapple ring in mug
6. Microwave at 70% power for 90 seconds to 2 minutes
7. Let rest for 2 minutes before serving
8. Optional: Run knife around edges and invert onto plate for traditional presentation
