Ingredients
1/2 ripe banana, mashed
1/4 cup all-purpose flour
2 tablespoons brown sugar
1 tablespoon melted butter
1/4 teaspoon baking powder
2 tablespoons milk
1/4 teaspoon vanilla extract
Pinch of salt
Pinch of cinnamon
Instructions
1. Mash the ripe banana in a small bowl until smooth but still chunky
2. In your microwave-safe mug, combine flour, brown sugar, baking powder, salt, and cinnamon
3. Add mashed banana, melted butter, milk, and vanilla extract to the mug
4. Mix all ingredients until just combined – don’t overmix
5. Microwave on high for 1 minute, then check doneness
6. If needed, microwave in additional 15-second increments until cooked through
7. Let cool for 30 seconds before enjoying
8. Top with whipped cream, nuts, or caramel sauce if desired
