Description

A wholesome, customizable breakfast inspired by morning glory muffins, made with steel-cut oats, fresh carrots, and warming spices. Ready in just 5 minutes using your microwave!


Ingredients

1/2 cup steel-cut oats or rolled oats

1/2 cup milk (dairy or non-dairy)

1/4 cup grated carrots

1 tablespoon chopped walnuts or pecans

1 tablespoon honey or maple syrup

1/4 teaspoon ground cinnamon

Pinch of ground nutmeg

Pinch of salt

1 tablespoon dried cranberries or raisins

1 teaspoon chia seeds (optional)


Instructions

1. Add oats, milk, honey, cinnamon, nutmeg, and salt to a large microwave-safe mug

2. Stir in grated carrots and mix well
