Description

Quick and delicious Fajita Rice Bowl made in a mug using just a microwave. Perfect for busy weeknights when you need a flavorful Mexican-inspired meal in minutes. Customize with your favorite toppings for a satisfying single-serving dinner.


Ingredients

1/2 cup cooked rice

1/4 cup diced chicken breast (cooked)

2 tablespoons sliced bell peppers

1 tablespoon chopped onions

2 tablespoons black beans (drained and rinsed)

1/2 teaspoon fajita seasoning

1 tablespoon olive oil

2 tablespoons shredded cheese

1 tablespoon diced avocado

Optional: sour cream, salsa, cilantro


Instructions

1. Cook chicken and vegetables in a pan until tender and lightly browned, then set aside

2. Cook rice according to package directions if not using leftover rice

3. Layer the cooked rice in the bottom of a large microwave-safe mug

4. Add the cooked chicken and sautéed vegetables on top of rice

5. Sprinkle fajita seasoning evenly over ingredients

6. Add black beans and drizzle with olive oil

7. Top with shredded cheese
