Description

A comforting, authentic Japanese miso soup ready in just 3 minutes using your microwave. This traditional recipe combines umami-rich miso paste with dashi broth and fresh ingredients for a nutritious, satisfying meal perfect for busy weeknights.

Ingredients

Scale

2 tablespoons miso paste (white or yellow miso preferred)

1 cup hot dashi broth (or hot water with 1 tsp dashi powder)

2 tablespoons diced silken tofu

1 tablespoon chopped green onions (scallions)

1 teaspoon dried wakame seaweed (optional)

1/4 teaspoon sesame oil (optional)

Instructions

1. Add miso paste to your favorite microwave-safe mug

2. Pour in 2 tablespoons of hot dashi broth and whisk until miso paste is completely dissolved with no lumps

3. Add remaining hot dashi broth to fill mug, leaving 1/2 inch space at top

4. Gently stir in diced tofu and wakame seaweed if using

5. Microwave on high for 60-90 seconds until steaming hot

6. Remove carefully (mug will be hot!) and top with chopped green onions

7. Drizzle with sesame oil if desired and serve immediately

Notes

Choose white miso for milder flavor or red miso for stronger umami taste

Make your own dashi by dissolving 1 tsp dashi powder in hot water, or use vegetable broth for vegan option

Store leftover miso soup in refrigerator up to 2 days – reheat gently to prevent separation

Add cooked noodles, mushrooms, or spinach for extra nutrition and heartiness

This recipe is naturally gluten-free when using tamari-based miso paste
