Ingredients
2–3 lasagna noodles, broken into bite-sized pieces 1/4 cup water 3 tablespoons marinara sauce, divided 2 tablespoons ricotta cheese 3 tablespoons shredded mozzarella cheese, divided 1 tablespoon grated Parmesan cheese 1/4 teaspoon Italian seasoning Salt and pepper to taste 1 tablespoon cooked ground beef or turkey (optional) Fresh basil leaves for garnish (optional)
Instructions
Lightly spray a large microwave-safe mug with cooking spray to prevent sticking. Place broken lasagna noodles in the bottom of the mug and add water to just cover the noodles. Microwave on high for 1 minute to soften the noodles slightly. Carefully remove the mug and drain any excess water. Layer 1 tablespoon marinara sauce over the noodles. Add half of the ricotta cheese and 1 tablespoon mozzarella cheese. Add cooked meat if using, then repeat layering with remaining sauce, ricotta, and most of the mozzarella. Sprinkle Italian seasoning, salt, pepper, and Parmesan cheese on top. Microwave on high for 90 seconds to 2 minutes, until cheese is melted and bubbly. Let rest for 30 seconds before handling (mug will be very hot). Top with remaining mozzarella and fresh basil if desired, then serve immediately.
Notes
Use a large mug to prevent overflow during cooking. Cooking times may vary depending on your microwave’s power – start with less time and add more if needed. For a vegetarian version, skip the meat and add spinach or mushrooms. Make it healthier by using whole wheat noodles or part-skim cheeses. Store leftover ingredients in the refrigerator for up to 3 days. This recipe easily doubles for a larger serving – just use a bigger mug and increase cooking time by 30-60 seconds.
