Description
This keto tres leches mug cake recipe is a single-serve version of the classic Latin dessert, made low-carb and microwave-ready. Fluffy almond flour cake is soaked with keto-friendly “three milks” and topped with whipped cream—all in minutes.
Ingredients
2 tbsp almond flour
1 egg
1/2 tsp baking powder
1 tbsp keto sweetener (monk fruit or erythritol)
1 tbsp butter (melted)
1/4 tsp vanilla extract
2 tbsp heavy cream
2 tbsp unsweetened almond milk
1 tbsp coconut milk
Instructions
1. In a small bowl, mix almond flour, baking powder, and sweetener.
2. Add egg, melted butter, and vanilla. Stir until smooth.
3. Pour into a 10 oz microwave-safe mug.
4. Microwave for 60–75 seconds until just set.
5. Poke cake with a fork several times.
6. Whisk together heavy cream, almond milk, and coconut milk.
7. Slowly pour over warm cake, let soak for 2–3 minutes.
8. Top with keto whipped cream and optional toasted coconut.
Notes
Use almond flour for best texture; coconut flour may require adjustments.
Let the milk soak in gradually to avoid sogginess.
Best served fresh but can be refrigerated up to 24 hours.
