This gluten-free mug cake is quick, rich, and microwave-made in just 60 seconds. No oven, no hassle—just a perfect chocolate fix.
Ingredients
2 tablespoons neutral-flavored oil (avocado oil, refined coconut oil, etc.)
5 tablespoons milk of choice (whole, 2%, almond, coconut, etc.)
1 teaspoon pure vanilla extract
¼ level cup gluten-free all-purpose flour with xanthan gum
2 tablespoons granulated white sugar or coconut sugar
3 tablespoons baking cocoa powder
⅛ teaspoon fresh baking soda
⅛ teaspoon salt
Optional: 2 tablespoons chocolate chips
Instructions
1. Add oil, milk, and vanilla to a mixing bowl and whisk.
2. Sift in gluten-free flour, sugar, cocoa powder, baking soda, and salt.
3. Whisk all ingredients until a smooth batter forms.
4. Transfer batter to a microwave-safe mug (8 to 12 oz).
5. Sprinkle chocolate chips on top, if using.
6. Microwave on high for 60 seconds.
7. Insert toothpick into center to test doneness.
8. If wet, microwave 10 seconds more and retest.
9. Let cool slightly before eating.
