Description
Creamy fettuccine alfredo made quickly in the microwave using just one mug. This restaurant-quality pasta dish is ready in 5 minutes with minimal cleanup required.
Ingredients
1/2 cup fettuccine pasta, broken into 2–3 inch pieces
3/4 cup hot water
1/4 cup heavy cream
2 tablespoons butter
1/3 cup freshly grated parmesan cheese
1/4 teaspoon garlic powder
1/4 teaspoon Italian seasoning
Salt and black pepper to taste
Instructions
1. Place broken fettuccine in a large microwave-safe mug. Add hot water to cover pasta by 1 inch. Add pinch of salt.
2. Microwave on high for 10-11 minutes or until pasta is tender. Stir halfway through cooking.
3. Carefully drain most water, leaving about 2 tablespoons in mug.
4. Immediately add cream, butter, parmesan cheese, garlic powder, and Italian seasoning to hot pasta.
5. Stir vigorously until cheese melts and sauce becomes creamy. Add pasta water if needed for consistency.
6. Season with salt and pepper. Let cool for 1 minute before serving.
Notes
For best results, use freshly grated parmesan cheese. Store-bought pre-grated cheese contains anti-caking agents that prevent smooth melting.
Recipe easily doubles for sharing – use a larger mug and increase cooking time by 1-2 minutes.
Add cooked chicken or shrimp for extra protein.
Leftover pasta water helps adjust sauce consistency.
