Ingredients
3/4 cup day-old cooked rice
1 large egg, beaten
2 tablespoons frozen mixed vegetables (peas, carrots, corn)
1 tablespoon soy sauce
1/2 teaspoon sesame oil
1/4 teaspoon garlic powder
Pinch of ginger powder
1 green onion, chopped (optional)
Salt and pepper to taste
Instructions
1. Break up cold rice with fingers to separate clumps
2. Add rice and frozen vegetables to a large microwave-safe mug (16+ oz capacity)
3. Pour beaten egg evenly over rice mixture
4. Add soy sauce, sesame oil, garlic powder, and ginger powder
5. Microwave on high power for 45 seconds
