Quick and delicious Prawn Laksa in a Mug recipe ready in just 10 minutes. This microwave-friendly Southeast Asian dish combines fresh prawns, rice noodles, and creamy coconut laksa broth for the ultimate comfort meal.


Ingredients

1 pound raw shrimp in shells, peeled (reserve shells)

¼ cup coconut oil or vegetable oil

1 small yellow onion, diced

2 cloves garlic, minced

3 inches fresh ginger, peeled and minced

23 tablespoons laksa paste

1 cup coconut milk

1 cup chicken or vegetable broth

2 oz rice stick noodles

1 cup bean sprouts

2 leaves bok choy, chopped

Fresh lime wedges for serving

Fresh cilantro for garnish


Instructions

1. Heat oil in a microwave-safe mug for 30 seconds

2. Add diced onion, garlic, and ginger to the mug and microwave for 1 minute

3. Stir in laksa paste until well combined

4. Add coconut milk and broth, stir thoroughly

5. Add rice noodles, ensuring they’re mostly submerged in liquid

6. Add peeled prawns on top

7. Microwave on high for 2-3 minutes until prawns are pink and noodles are tender

8. Carefully remove from microwave (mug will be hot)
