Ingredients
1/4 cup coconut cream (full-fat canned)
2 tablespoons whole milk
2 tablespoons granulated sugar
1 large egg yolk
1 tablespoon all-purpose flour
1/4 teaspoon vanilla extract
1 pinch of salt
2 tablespoons shredded coconut flakes
2 tablespoons whipped cream (for topping)
1 teaspoon toasted coconut flakes (for garnish)
Instructions
1. In a microwave-safe mug, whisk together coconut cream, milk, and sugar until sugar dissolves completely
2. Add egg yolk and whisk until well combined and smooth
3. Sprinkle flour over mixture and whisk until no lumps remain
4. Add vanilla extract and salt, then stir in coconut flakes
5. Microwave on high for 1-2 minutes, watching carefully to prevent overflow
6. Remove from microwave and let cool for 2-3 minutes (it will continue to thicken as it cools)
7. Top with whipped cream and toasted coconut flakes before serving
