Quick 2-minute chocolate chip protein mug muffin perfect for busy mornings. Packed with 18g protein and made with simple ingredients right in your microwave. This healthy breakfast treat combines convenience with nutrition for the ultimate morning fuel.
Ingredients
2 tablespoons vanilla protein powder
2 tablespoons all-purpose flour
1/4 teaspoon baking powder
Pinch of salt
3 tablespoons milk (dairy or non-dairy)
1 tablespoon honey or maple syrup
1/4 teaspoon vanilla extract
2 tablespoons mini chocolate chips
Instructions
1. Spray a microwave-safe mug with cooking spray or lightly grease with butter.
2. In the mug, whisk together protein powder, flour, baking powder, and salt until well combined.
3. Add milk, honey, and vanilla extract. Stir gently until just combined – don’t overmix.
4. Fold in chocolate chips, reserving a few for topping if desired.
5. Microwave for 60-90 seconds, checking at 60 seconds. The center should spring back lightly when touched.
6. Let cool for 30 seconds before enjoying. Top with extra chocolate chips if desired.
Notes
Microwave times vary – start with 60 seconds and add more if needed.
For vegan version, use plant-based protein and non-dairy milk.
