2 tablespoons black beans, drained and rinsed

1 tablespoon tomato paste

1/4 cup low-sodium chicken broth (or vegetable broth)

1/2 teaspoon chili powder

1/4 teaspoon ground cumin

1/8 teaspoon smoked paprika

Pinch of salt and black pepper

Optional: 1 tablespoon shredded cheese

Instructions

1. Add ground meat, diced onion, bell pepper, and garlic to a large microwave-safe mug.

2. Microwave on 70% power for 90 seconds, then stir to break up meat.

3. Add tomato paste, diced tomatoes, both types of beans, and all seasonings to the mug.

4. Pour in chicken broth and stir everything together until well combined.

5. Microwave on 70% power for 90 seconds, stir, then microwave for another 90 seconds.

6. Let stand for 30 seconds, then stir again and taste for seasoning adjustments.
