Ingredients
1/2 cup cooked chicken breast, diced
1 tablespoon curry powder
1/4 cup coconut milk
2 tablespoons diced onion
2 tablespoons diced bell pepper
1/2 teaspoon minced garlic
1/4 teaspoon ginger powder
Salt and pepper to taste
Instructions
1. Add diced chicken to a microwave-safe mug
2. Sprinkle curry powder, garlic, and ginger over chicken
3. Add diced onions and bell peppers
4. Pour coconut milk over ingredients
5. Season with salt and pepper
6. Stir gently to combine all ingredients
7. Microwave on high for 1-2 minutes until hot
8. Stir again and let cool for 30 seconds before serving

Use a microwave-safe mug that holds 12-16 oz
Adjust spice level by increasing or decreasing curry powder
