Description

Quick and delicious Breakfast Hash in a Mug ready in just 3 minutes! Perfect microwave breakfast combining fluffy eggs, seasoned potatoes, melted cheese and your favorite add-ins. Great for busy mornings and meal prep.


Ingredients

Scale

1/2 cup diced potatoes (fresh or frozen hash browns)

1 large egg

1 tablespoon shredded cheddar cheese

1/4 cup diced vegetables (bell peppers, onions, mushrooms)

2 tablespoons diced ham or cooked bacon (optional)

Salt and pepper to taste

Cooking spray or butter for greasing


Instructions

1. Grease a large microwave-safe mug with cooking spray or butter

2. Add diced potatoes to the mug, cover and microwave on high for 3-4 minutes until tender

3. Add diced vegetables and meat (if using) to the cooked potatoes

4. Crack the egg into the mug and gently stir all ingredients together

5. Microwave on high for 1-2 minutes, checking at 30-second intervals until egg is cooked to your preference

6. Sprinkle cheese on top and microwave for an additional 15 seconds to melt

7. Let cool for 1 minute before serving. Carefully remove from microwave as mug will be hot


Notes

Cooking times may vary depending on microwave wattage. Start with less time and add more as needed.

For meal prep: Prepare ingredients the night before, add egg in the morning before cooking.
