Description

Ingredients

1/2 cup cooked rice (day-old preferred)

1 large egg

1 tablespoon soy sauce

1/4 cup diced vegetables (peas, carrots, bell peppers)

1 green onion, chopped

1 teaspoon oil

Salt and pepper to taste


Instructions

1. Crack egg into a small bowl and whisk with salt and pepper

2. In a microwave-safe mug, add oil and pre-cooked rice, breaking up clumps

3. Add diced vegetables and any cooked meat if using

4. Pour whisked egg over rice mixture and stir gently to combine

5. Microwave on high for 1-2 minutes until egg is cooked and rice is heated through

6. Check and microwave additional 30 seconds if needed

7. Stir in soy sauce and chopped green onions

8. Let cool for 1 minute before enjoying
