Ingredients

2 large eggs

2 tablespoons milk

1/4 cup frozen hash browns

2 tablespoons breakfast sausage, cooked and crumbled

2 tablespoons shredded cheddar cheese

1 tablespoon diced bell pepper

1 tablespoon diced onion

Salt and pepper to taste

1/4 teaspoon cumin

Pinch of paprika


Instructions

1. Spray a large microwave-safe mug with cooking spray.

2. Add frozen hash browns to bottom of mug.

3. Beat eggs with milk, salt, pepper, cumin, and paprika in a small bowl.

4. Pour egg mixture over hash browns.

5. Add cooked sausage, bell pepper, and onion.

6. Microwave at 50% power for 1 minute.

7. Stir gently and top with cheese.

8. Microwave at 70% power for 60-90 seconds until eggs are set.

9. Let rest for 30 seconds before serving.

10. Garnish with additional cheese or hot sauce if desired.
