Ingredients
1/4 cup all-purpose flour
2 tablespoons granulated sugar
1/4 teaspoon baking powder
Pinch of salt
3 tablespoons milk
2 tablespoons melted butter
1/4 teaspoon vanilla extract
1/3 cup fresh or frozen blueberries
1 tablespoon brown sugar
1/4 teaspoon cinnamon
Instructions
1. In a microwave-safe mug, whisk together flour, granulated sugar, baking powder, and salt.
2. Add milk, melted butter, and vanilla extract. Stir until just combined – don’t overmix.
3. Gently fold in half the blueberries, being careful not to burst them.
4. Top with remaining blueberries, brown sugar, and cinnamon.
5. Microwave for 90 seconds at full power, checking at 60 seconds if needed.
6. Let cool for 1 minute before eating to allow juices to settle.
7. Serve warm with ice cream or whipped cream if desired!
Notes
Don’t thaw frozen blueberries – add them directly to prevent excess moisture.
