Description
A quick and hearty beef stew made in a mug using your microwave. Perfect for single servings and busy weeknights when you crave comfort food fast.
Ingredients
1/3 cup pre-cooked beef strips, diced small
2 tablespoons diced carrots
2 tablespoons diced potatoes
1 tablespoon diced onion
1/3 cup beef broth
1 teaspoon tomato paste
1/2 teaspoon Worcestershire sauce
1/4 teaspoon garlic powder
1/4 teaspoon dried thyme
1 teaspoon cornstarch
1 tablespoon cold water
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
1. In a large microwave-safe mug, combine diced carrots, potatoes, and onion.
2. Add 2 tablespoons of beef broth and microwave for 90 seconds on high power.
3. Stir in remaining broth, tomato paste, Worcestershire sauce, garlic powder, and thyme.
4. Add pre-cooked beef pieces and mix well.
5. Mix cornstarch with cold water to create a slurry, then stir into the mug.
6. Microwave for 60-90 seconds more, until vegetables are tender and stew has thickened.
7. Stir well, let rest 1 minute, season with salt and pepper.
8. Garnish with fresh parsley if desired and serve immediately.
Notes
Use pre-cooked beef for best results – rotisserie, leftover roast, or deli meat works well
Cut vegetables very small (pea-sized) for even cooking
Adjust liquid consistency by adding more broth if needed
Let stew rest 1-2 minutes before eating for best flavor
